Political Economy of the Environment course

I am considering developing a course on the political economy of the 
environment, and would appreciate suggestions for my own reading, as well as 
readings appropriate for upper level undergraduates.  One possibility is 
Vandana Shiva's Stolen Harvest: The Hijacking of the Global Food Supply, South 
End Press.
